Scrambled eggs on toast

Simple, filling, cheap and easy to make this real comfort food makes a nice change and can be whipped up in a hurry.

It might not seem anything fancy but really is a tasty, quick lunch that you might never think about.

 

Soft and fluffy scrambled egg sprinkled with chives with lightly toasted bread

Ingredients

2 medium eggs

Salt

Ground black pepper

1 tsp butter / splash of olive oil

Toast (toasted and buttered to your liking)

 

Method

1. Crack the eggs into a bowl and whisk until well blended

2. Add a pinch of salt and pepper to taste

3. Put a non-stick frying pan over a low heat and add the butter / oil

4. Once warm add the egg and stir / fold using a wooden spoon or silicone spatula

5. When the eggs are still a little runny remove the pan from the heat and let the eggs sit in the pan for 1 minute

6. Top the toast with the eggs and sprinkle with a few chives before serving
