Vegetable Omelette Recipe

If you have any leftover vegetables or eggs in the fridge, why not make this simple but tasty veggie omelette recipe from Love Food Hate Waste chef Clover.

Perfect for if you are pressed for time and are after a filling meal.

Veggie omelette


1 tsp oil
1 Onion (Chopped)
½ pepper (chopped)
1 diced courgette
A few pieces of broccoli (fresh or frozen)
3 eggs
50g grated cheese
Salt, pepper and any seasonings you want to add


  1. Add oil to pan and allow to heat up for a few seconds
  2. Add chopped onions and cook for 2 minutes
  3. Add pepper, courgette, and broccoli
  4. Stir the vegetables and allow to simmer for a few minutes
  5. Add the whisked eggs and allow to cook
  6. Add cheese and allow to melt for a few minutes
  7. Add any seasonings you want
  8. Serve and enjoy
