Ingredients
200g diced pumpkin flesh
200g brown sugar
2 eggs
150g plain flour
1 heaped tsp baking powder
1/2 tsp cinnamon
Handful walnuts
90ml olive oil
Pinch of salt
Method
Preheat a fan oven to 180 C
Blend the squash in a food processor
Add all the other ingredients and blend until even
3/4 fill cake cases and bake for 20 minutes
