Pumpkin cakes

This easy bake is a great way to use up any flesh from your pumpkin this Halloween, it is quick, simple and makes a super tasty treat.

Ingredients

200g diced pumpkin flesh

200g brown sugar

2 eggs

150g plain flour

1 heaped tsp baking powder

1/2 tsp cinnamon

Handful walnuts

90ml olive oil

Pinch of salt

 

Method

  1. Preheat a fan oven to 180 C
  2. Blend the squash in a food processor 
  3. Add all the other ingredients and blend until even
  4. 3/4 fill cake cases and bake for 20 minutes
