A fabulous, quick and easy microwave recipe from our Love Food Hate Waste chef, Clover Hutson.

 

Using your microwave can be a really quick, easy and cheap way to rustle up a mid-week treat without the time, hassle and cost of turning on the hob.

 

This tasty jambalaya is ready in a flash and a great way to feed the family whether you're pushed for time or are just trying to cut the cost of cooking.

Prep time: 10 minutes

Cooking time: 20 minutes

Ingredients

1 can of chopped tomatoes
2 tsp of cajun seasoning
400g easy cook rice
1 yellow and 1 red pepper - small dice
4 spring onions - sliced
100g chorizo - diced
50g frozen peas / sweetcorn
A handful of chopped parsley

 

Method

  1. Tip in the chopped tomatoes into a large microwavable bowl, add the rice and using the can of tomatoes fill with water and pour over the rice and tomatoes until covered.
  2. Stir in the cajun seasoning, salt and pepper.
  3. Now add the peppers, spring onions and chorizo.
  4. Stir well, cover with cling film and microwave for- 10 minutes.
  5. Remove the bowl and stir again
  6. Add the peas and sweetcorn.
  7. Pop back in the microwave for a further 10 minutes.
  8. Remove the bowl and check everything is cooked - mostly the rice, give it a further 5 minutes if needed.
  9. Leave to sit for a minute and then stir through the parsley before serving.
