Luscious lemon microwave pudding

A fabulous, quick and easy microwave recipe from our Love Food Hate Waste chef, Clover Hutson.

 

Using your microwave can be a really quick, easy and cheap way to rustle up a mid-week treat without the time, hassle and cost of heating up the oven.

 

This tasty pud freezes well or can be kept in a sealed tub in the fridge for upto 4 days.  If lemon isn't your thing simply swap out the lemon curd for any kind of curd or jam for a fruity treat.

Feeds: 2-3

Prep time: 5 minutes

Cooking time: 5-6 minutes

 

Ingredients

125g self raising flour
125g castor sugar
125g of margarine (plus a little for greasing)
2 eggs
1 tsp of baking powder
4 tbsp of lemon curd

 

Method

  1. In a mixing bowl add all the ingredients except the lemon curd
    and mix well into a sponge batter with a spatula.
  2. Now grease a medium microwave proof dish.
  3. Spoon the lemon curd into the bottom and microwave for 1 minute so you
    can smash it down across the dish.
  4. Now pour over the sponge batter and microwave for 3 minutes, turn the dish and continue for 2/3 minutes.  It should be firm to touch.
  5. Serve with some creme fraiche for a fast and tasty pudding.
